Technical Sheet Philosophy
What do Soy sauce, Parmesan cheese, and white truffles all have in common? They are all "Umami Bombs," You think you know Umami, yes it is the 5th taste you can find it in several food and sauces in your dishes, but wait to taste Umami Wine to discover its deliciousness. It is Endlessly Alluring.

Varietal Composition
50% Merlot, 50% Cabernet Franc

Winemaking
The grapes are hand-picked at the peak of flavor development at early September to late October 2016, de-stemmed, crushed than went through 17-days of temperature-controlled fermentation in 100% stainless steel tanks, 3 times daily for maximum flavor and color extraction. After malolactic fermentation, the wines were aged separately in oak barrels for 8 months. The blend was then assembled and allowed to co-mingle for 30 days prior to bottling. 5000 bottles produced.

Tasting Notes
The nose features aromas of black cherry, chocolate, roast beef. On the palate, a soft attack of roast meat, dried tomato, light spicy, aged cheese with silky tannins and food- friendly acidity, leading to an elegant finished.

Philosophie
Qu'est-ce que la sauce de soja, le parmesan et les truffes blanches ont en commun? Ils sont tous des "Bombes Umami", vous pensez connaître Umami, oui c'est le 5ème goût que vous pouvez trouver dans plusieurs plats et sauces dans vos plats, mais attendez de goûter le vin Umami pour découvrir son délice. C'est infiniment séduisant.

Composition variétale
50% Merlot, 50% Cabernet Franc

Vinification
Les raisins sont vendangés manuellement au point exact du développement aromatique, cela entre septembre et fin octobre 2016, éraflés, macérés pendant 17 jours de fermentation à température contrôlée dans des cuves en acier inoxydable à 100%. Remontage 3 fois tous les jours pour une extraction maximale de la saveur et de la couleur. Après la fermentation malolactique, les vins ont été élevés séparément en fûts de chêne pendant 8 mois. Ensuite l'assemblage a eu lieu et le vin laissé co-mêler pendant 30 jours avant la mise en bouteille. 5000 bouteilles produites.

Notes de dégustation
Le nez présente des arômes de cerise noire, de pruneau, de chocolat, de rosbif. En bouche, une attaque douce de viande rôtie, de tomate séchée, de fromage léger et épicé, avec des tanins soyeux et une acidité alimentaire, pour une finale élégante.
