LOCATION: Cedars Mountain- Lebanon

GRAPE VARIETIES: 40% CABERNET SAUVIGNON + 60% SYRAH

SOIL COMPOSITION:
Clay pour soil. Plots located on slopes with an average altitude of 1,800 m sunny terraces, highest 32˚C and lowest 16˚C during summer.

EXPLOITATION OF THE VINEYARD:
The soil is ploughed mechanically, respecting its environmental balance. Ainata Al Arez is regularly hit by the cold, dry north wind ensuring a very minimalist and none interventionist wine culture.

VINIFICATION AND AGING:

Harvested by hand in small 20 kg crates.
Pre-fermentation maceration in cold temperatures (10˚C) for one week.
Plot by plot vinification, in thermos regulated stainlesssteel tanks, for 1 month.
Gentle extraction, regularly pumping over the must (remontage) and punching down the caps (pigeage).
10 months aging of fine less (20% 1-2 years’ barrels, 80% in tanks).

2015 VINTAGE:
The 2015 harvest was as late as in 2014. A dry spring led to a cool summer, and the grapes did not receive enough sun until the end of august. September and October were surprisingly warm and sunny, which allowed us to wait and harvest the mature grapes at the end of October.

TASTING 2015 VINTAGE:
Very expressive nose, with hints of blackberry, liquorice and violet, but also more smoky aromas when aerated. The wine’s tannic structure is soft and silky on the palate. Fruity aromas on the nose, joined to its acidic palate, give this wine a long aftertaste.
